How you consume chia seed is super important and I never recommend eating chia seeds dry. They will absorb the water in your body and can can lead to choking or can expand and bloat in your gut. It is reported that chia seeds can become 12 times their original size when soaked (what?!). Be sure you soak your chia seeds in water, yogurt, oatmeal or another liquid before consuming.

Chia Seed Water (serves 2)
1 tablespoon chia seeds
1 ½ cups water either warm or cold
½ lemon, juiced
In a mason jar or large glass add the chia seeds & water.
Squeeze lemon juice in the drink. Shake.
Let rest for 5-10 minutes, stirring occasionally, or until the chia seeds have formed a gel.
