Affordable Nutrition is the idea you can eat healthy on a budget. This weeks recipe features watermelon which is hydrating, nutrient dense and delicious!
Watermelon is a classic summer fruit that is packed full of vitamins, minerals and antioxidants. This fruit is highly alkalinizing and an excellent way to hydrate (they can contain over 90% water). Hydration is KEY for proper organ function and overall health. Watermelon helps support your immune system as it is rich in vitamin C, vitamin A and lycopene. It is also a natural diuretic and flushes the kidneys.
This is a great salad to bring to a summer party or barbecue. You can serve this as a side salad, with fish tacos or as a sweet treat. I did a live Watermelon Salsa food demo with my friend Carly Perkins (certified life coach) on Instagram live where we chatted about our summer plans, how to read a food label and ways we eat watermelon. PRO TIP: Don't throw away the seeds and rinds, you can eat them and they are nutrient dense AF! Seeds and rinds are high in magnesium, vitamin C, zinc and potassium. I talk about a fun way to prepare the rinds and seeds in our Instagram live, check out the video here.
