Affordable Nutrition is the idea you can eat healthy on a budget. This months recipe features watermelon which is hydrating, nutrient dense and delicious!
Watermelon is a classic summer fruit that is packed full of vitamins, minerals and antioxidants. This fruit is highly alkalinizing and an excellent way to hydrate (they can contain over 90% water). Hydration is KEY for proper organ function and overall health. Watermelon helps support your immune system as it is rich in vitamin C, vitamin A and lycopene. It is also a natural diuretic and flushes the kidneys.
This is a great salad to bring to a summer party or barbecue. You can serve this as a side salad, with fish tacos or as a sweet treat. PRO TIP: Don't throw away the seeds and rinds, you can eat them and they are nutrient dense AF! Seeds and rinds are high in magnesium, vitamin C, zinc and potassium. Fresh watermelon salsa
Watermelon Salsa (serves 8-10)
Inspired by Affordable Nutrition by Jessica Bauman
Ingredients
3 cups of watermelon, cubed
1/4 medium red onion, chopped
1 red bell pepper, seeded & chopped
1/3 cup cilantro, chopped
Juice of 1 lime
1 tsp olive oil
pinch of sea salt
Preparation
-Chop onion, bell pepper, jalapeño and cilantro
-Cube watermelon
-In a large bowl mix all ingredients together
-Enjoy!
